Ingredients

  • 1 pouch Merchant Gourmet Puy Lentils
  • 1 pack smoked mackerel 
  • 3 medium sized beetroots, grated
  • 250g white and red chicory
  • 1 apple, sliced
  • A handful of tender-stem broccoli, steamed
  • A big handful of salad leaves
  • Extra virgin olive oil to drizzle
  • Seeds and nuts of choice to sprinkle on top, I prefer pumpkin seeds and chopped hazelnuts
  •  

    Horseradish dressing:

  • 150g crème fraiche 
  • 2 tbsp horseradish (from a jar)
  • Juice of ½ lemon 
  • 1 tbsp extra virgin olive oil
  • Salt and pepper 

Instructions

  1. Put all the salad ingredients in a large bowl and combine. 
  2. To make the dressing, mix together the crème fraiche, horseradish, lemon juice and oil in a bowl. Season well to your preferred taste and top your salad.
