Ingrédients
- 1 pouch of Merchant Gourmet Mango, Chilli & Lime Rice
- 4 chicken thighs skinless, I also used chicken breast I like to mix both together
- 1 red onion, finely chopped
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 green and red chilli, finely chopped
- 1 tin of coconut milk
- 2 red peppers, roughly chopped
- 1 tbsp macadamia oil
Méthode

Sauté the onions over a medium heat until soft. Add the peppers and cook for a few minutes until they start to soften.

Add the garlic, chillies, chicken, paprika and cayenne pepper and mix well.

After cooking for a few minutes, add the coconut milk and cover. Cook gently for 45 minutes.

When the chicken is ready to serve, heat the Mango rice, according to packet instructions.

Plate up and enjoy!
