Quinoa and Watermelon Summer Salad

A simple and light, refreshing salad perfect for enjoying in the sun packed with watermelon, quinoa, goats cheese and pickled shallots.

Ingrédients

  • 1 pouch MG quinoa
  • 1 watermelon, chopped 
  • 150g goats cheese
  • Pickled shallots

  • 4 shallots
  • 1 chopped beetroot 
  • 150ml rice wine vinegar
  • 2.5 tbsp caster sugar 
  • 50ml water 
  • Dressing

  • Juice of 1/2 lemon
  • 3 tbsp olive oil
  • Handful of chopped mint 
  • Salt and pepper

Méthode

  1. First, pickle the shallots. Simply combine the finely sliced shallots with the pickle ingredients in a jar and leave for at least 30 minutes. 
  2. In a bowl, mix up the ingredients needed for the dressing. 
  3. Combine half the dressing with the Merchant Gourmet quinoa and top with the watermelon, goats cheese and pickled shallots.
  4. Finish by drizzling over the rest of the dressing.
