Ingrédients
- 1 pouch Merchant Gourmet Wholegrain Spelt
- 2 fillets of salmon (substitute with torn mozarella for a veggie option)
- Dash of white wine
- Slices of lemon
- Feta
- 30g mint
- 50g basil
- 40g parmesan cheese
- 110g olive oil
- 80g toasted pistachios
- Juice of 1 small lemon
Pesto
Méthode
- Preheat your oven to 180 degrees. Prepare your salmon in an ovenproof dish with a splash of wine, slices of lemon and seasoning.
- Roast for 15 minutes or until cooked through.
- While this cooks, blend your pesto ingredients.
- Warm your spelt in a pan with a splash of water for a few minutes, then add in 3 heaped tbsp of pesto and continue to heat.
- Serve with your salmon, a sprinkle of chillies and feta.
