Ingrédients
- 1 pack Merchant Gourmet brown, red and wild rice
- 1 baby gem lettuce
- 1 red onion
- 1/2 cucumber
- Handful of small tomatoes/ 3 large tomatoes
- 1 red pepper
- 150g chorizo
- 1 pack halloumi
- Parsley
- 1 lemon
- Extra virgin olive oil
- Flakey salt and cracked black pepper
Méthode
- If using wooden skewers, start by soaking them in water to avoid burning.
- Prep the salad by scooping out the centre of the cucumber and dice, slice half the red onion, chop the lettuce and tomatoes. Dress with a glug of olive oil, the juice of half a lemon and a generous pinch of salt.
- Heat the Merchant Gourmet brown, red & wild rice according to packet instructions. Add the rice to the salad and toss well.
- Prep the skewers - cut the halloumi, remaining half red pepper and half red onion into chunks and slice the chorizo. Assemble, drizzle with olive oil and season with pepper.
- Pan-fry over a medium heat, griddle or barbecue the skewers. Use a spatula to loosen the halloumi when turning if required.
- Finish the salad with finely chopped parsley, a crack of black pepper and lemon wedges.
