Loaded Burrito with Mexican Veg & Quinoa

Our Mexican-Style Veg & Quinoa belongs in a burrito. Loaded with colourful vegquinoa, lime and avocado, this one is a hit.

Ingrédients

  • 1 shallot 
  • 1 chilli 
  • 1 avocado 
  • 1 lime 
  • Small bunch of coriander 
  • 2 large tortillas
  • A few iceberg lettuce leaves 
  • 1 pack of Merchant Gourmet frozen Mexican-Style Veg& Quinoa 

Méthode

  1. Begin by making the salsa. Dice the tomatoes, shallot and ½ the chilli and add to a bowl with the juice of half a lime. Season with salt and pepper and set aside. 
  2. Next take the avocado and add to a small food processor with the other half of the chilli and the coriander. Squeeze in the juice of half a lime and season with salt and pepper. Blend to a smooth consistency. 
  3. Cook the Mexican-Style Veg & Quinoa as per the instructions on pack. Allow to cool slightly before assembling the burrito. 
  4. Take a tortilla and lay it on a chopping board, then add the thick layer of the avocado to the centre of the wrap then spread. Top with the salsa and lettuce then add half the quinoa mix in a horizontal sausage shape. Repeat with the second tortilla. To wrap the burritos, fold in the two edges then roll them up. 
  5. Secure the burritos by toasting in a griddle pan before slicing on a diagonal and serving. Enjoy!
