Ingrédients
- 2 red peppers
- 1 x 250g pouch of Mediterranean-Style Grains
- 1 pack of Panko breadcrumbs
- 1 mixed salad bag
- Olive oil
Méthode
- Preheat your oven to 180C.
- Halve the peppers vertically and remove the seeds, aiming to keep the stalks intact.
- Drizzle with olive oil and a sprinkle of salt and pepper then place, cut side up, in a baking tray.
- Bake in the oven for approximately 20-25 minutes until soft.
- Remove and fill with the pouch of Mediterranean Grains.
- Top with breadcrumbs and another drizzle of olive oil. Place back into the oven for 10 mins until lightly browned and crispy on top.
- Serve with a side salad of your choice. Enjoy!
