Ingrédients
- 1 large cauliflower
- 1 tsp cumin
- 1 tsp turmeric
- 1 x 250g pouch of Merchant Gourmet Glorious Grains
- 1 lemon
- 1 pomegranate, seeds removed
- Handful of chopped coriander
Méthode
- Heat the oven to 200C.
- Separate your cauliflower head and leaves - zero waste please!
- Chop up the head into large florets and separate the leaves.
- Place florets and leaves on a large baking tray. Toss with a glug of olive oil, spices, salt and pepper.
- Roast for 20 minutes until florets are soft and golden and leaves are crispy.
- Once roasted, heat the Glorious Grains in the microwave.
- Mix in a drizzle of olive oil, a squeeze of lemon juice, chopped coriander and any other salad or veggies you’ve got in the fridge. We love radish, cucumber and red onion!
- Season with salt and pepper, add a few spices if you fancy.
- To serve, place your herby grains on a plate, top cauliflower florets and crispy leaves. Finish with a handful of pomegranate seeds and any remaining coriander, tuck in!

Other tasty toppings include plant-based feta, a drizzle of tahini or chilli oil.
