Ingrédients
- 1 slice of bread
- 1 garlic clove, grated
- 1 tsp oregano
- 2 tbsp olive oil
- 300-400g heritage tomatoes, sliced
- 1 x 250g pouch of Merchant Gourmet Mediterranean-Style Grains
- 5g basil leaves
Méthode
- Preheat the oven to 180C (160C fan).
- Put the bread, garlic, oregano and a big pinch of salt and pepper in a food processor and blitz into breadcrumbs. Pour in the oil and blitz for a few seconds more until the breadcrumbs are evenly coated. Spread out on a non-stick baking tray and bake in the oven for 5-10 minutes, or until golden brown, watching carefully to ensure they don’t burn. Remove and set aside to cool and crisp up.
- Meanwhile, break the grains up a little in the packet. Divide between two bowls, layering up with the tomato slices.
- Top with the basil leaves and breadcrumbs, and drizzle with a little olive oil to serve.
