Ingrédients
- 250g watermelon
- 1 x 250g pouch of Merchant Gourmet Red & White Quinoa
- 175g vegan feta
- 200g cucumber
- 2 sprigs of mint
- 3 tbsp olive oil
- Juice of 1 lime
- Sea salt to season
Méthode
- Chop up the watermelon, feta and cucumber into small bite-sized cubes and toss in a large bowl with the quinoa, until well-combined and distributed. Cover the salad with the olive oil, juice of a lime and sea salt.
- To finish, chop up the mint leaves and add, stirring well before serving.
