Ingrédients
- 1 x 250g pouch of Merchant Gourmet Smoky Spanish Style Grains & Rice
- A mixture of vegetables, finely diced. We love cauliflower, green peppers, cherry tomatoes and sweetcorn!
- Baby gem lettuce, split into cups
- 2 tsp tahini
- Squeeze of lemon
- Salt and pepper
- 4 tsp water
- Olive oil
Dressing:
Méthode
- Preheat your oven to 200C.
- Heat your Merchant Gourmet Smoky Spanish Style Grains & Rice as per the instructions and tip into a large bowl.
- Chop your vegetables and add to a lined baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes until soft and roasted.
- Whilst the veg is roasting, make your dressing. Combine all the ingredients in a small bowl and whisk to form a liquid consistency.
- Add the roasted vegetables to the rice and mix thoroughly. Spoon the mixture into the lettuce cups and drizzle over the dressing. Enjoy!
