Spanish-Style Lettuce Cups with Tahini Dressing

Spanish-Style Lettuce Cups with Tahini Dressing

This is a quick and simple meal that takes under 30 minutes to make. It's fuss-free, fresh and packed full of flavour. 

Swap the veg for any leftovers you have in the fridge!

Ingrédients

  • 1 x 250g pouch of Merchant Gourmet Smoky Spanish Style Grains & Rice
  • A mixture of vegetables, finely diced. We love cauliflower, green peppers, cherry tomatoes and sweetcorn!
  • Baby gem lettuce, split into cups
  • Dressing:

  • 2 tsp tahini
  • Squeeze of lemon
  • Salt and pepper 
  • 4 tsp water
  • Olive oil

Méthode

  1. Preheat your oven to 200C.
  2. Heat your Merchant Gourmet Smoky Spanish Style Grains & Rice as per the instructions and tip into a large bowl.
  3. Chop your vegetables and add to a lined baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes until soft and roasted. 
  4. Whilst the veg is roasting, make your dressing. Combine all the ingredients in a small bowl and whisk to form a liquid consistency.
  5. Add the roasted vegetables to the rice and mix thoroughly. Spoon the mixture into the lettuce cups and drizzle over the dressing. Enjoy!
