Ingrédients
- 1 pouch of Merchant Gourmet Tomatoey French Lentils
- ¼ red onion
- ¼ cucumber
- A few cherry tomatoes
- Small handful of parsley
- Small handful of coriander
- Few leaves of mint
- Lemon
- Olive oil
- 1 cauliflower, cut into 1 inch steaks
- ½ tsp paprika
- ½ tsp ground cumin
- ½ tsp chilli flakes
Méthode
- Preheat the oven to 200C. Begin by removing any leaves from the cauliflower then cut a 1 inch thick steak from the centre and trim any hard bits of stalk.
- In a small bowl mix together the spices with a good pinch of salt and pepper and a tbsp of olive oil.
- Place the cauliflower on a baking tray and brush both sides with a spice mixture.
- Place the cauliflower in the oven and roast for 20 minutes or until slightly charred and cooked through.
- While the cauliflower cooks, crack on with the lentils. Dice the onion, cucumber and tomatoes and add to a bowl along with the lentils.
- Finely chop the herbs and add these to the same bowl. Season with salt and pepper then mix everything together and finish with a squeeze of lemon and a little olive oil.
- Serve the lentils with cauliflower and enjoy!
