Mediterranean Veg & Grains with Roasted Aubergine & Tahini

Mediterranean-Style Veg & Giant Couscous, topped with roasted aubergine and a creamy, tahini drizzle. A simple, delicious meal that's packed with veg and big on flavour.

Ingrédients

  • 1 aubergine, halved lengthways
  • Olive oil
  • Salt and pepper
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 garlic clove
  • Mediterranean-Style Vegetables & Giant Couscous

Méthode

  1. Preheat your oven to 180C. Roast the aubergines with a drizzle of olive oil, salt and pepper for about 30 minutes until soft.
  2. Mix the tahini with lemon juice, garlic and a splash of water until you have a loose consistency.
  3. Heat the Mediterranean-Style Vegetables & Giant Couscous as per the instructions. 
  4. Serve the roasted aubergine alongside the grains and drizzle with the tahini mix.
