Ingrédients
- 1 aubergine, halved lengthways
- Olive oil
- Salt and pepper
- 2 tbsp tahini
- 1 lemon, juiced
- 1 garlic clove
- Mediterranean-Style Vegetables & Giant Couscous
Méthode
- Preheat your oven to 180C. Roast the aubergines with a drizzle of olive oil, salt and pepper for about 30 minutes until soft.
- Mix the tahini with lemon juice, garlic and a splash of water until you have a loose consistency.
- Heat the Mediterranean-Style Vegetables & Giant Couscous as per the instructions.
- Serve the roasted aubergine alongside the grains and drizzle with the tahini mix.
