Bring some colour to the table with the best of winter’s seasonal fruits and veg for this fresh and filling salad. Orange and pomegranate bring bursts of juiciness against the bitterness of radicchio, all brought together with the Spiced Grains & Chestnuts.

Ingrédients

Méthode

  1. Cut the orange into segments and place in one bowl, squeezing all the juice into another.
  2. Finely slice the fennel either using a mandolin or a very sharp knife. Add to the bowl of orange juice and mix well to coat.
  3. Halve the pomegranate and bash with a spoon on the curved side to knock all the seeds out into a bowl.
  4. Toss torn radicchio leaves with the fennel slices, orange segments and the Spiced Grains & Chestnuts and put in a big serving bowl.
  5. Mix a quick dressing of 1 part cider vinegar to 3 parts olive oil, and season with salt and pepper.
  6. Drizzle over the salad, and sprinkle with pomegranate seeds.

Good to know!

You can add any of your favourite winter veg to this colourful salad.
