Ingrédients
- 1 large cauliflower
- 1 onion
- 2 tsp garam masala
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp turmeric
- 1 x 250g pouch of Merchant Gourmet Glorious Grains
- 200g pack dried apricots
- 1 small bunch of fresh coriander
- 200g vegan mayonaise
- 1 lemon, juiced
- 4 tbsp mango chutney
- 1x 400g tin chickpeas, drained
- 1 romaine lettuce

Méthode
- Preheat the oven to 180C fan.
- Cut the cauliflower into florets and put into a large baking tray (you can use the chopped leaves too!).
- Chop the onion into wedges and add to the tray along with a glug of extra virgin olive oil, salt, pepper and the spices
- Mix well and place in the oven to roast for approx. 30 minutes.
- In the meantime, quarter the dried apricots and mix them into the Glorious Grains along with the chopped coriander, leaving some to garnish.
- In a small bowl, mix together the mayonnaise, lemon juice and mango chutney with a good grind of black pepper.
- After 30 minutes in the oven, drain the tin of chickpeas and add to the cauliflower, mix well and return to the oven.
- Chop the lettuce up and arrange on a serving platter.
- Top with the mixed grains.
- Take the cauliflower out of the oven and let cool slightly then add on top of the grains.
- Drizzle over the sauce and garnish with the flaked almonds and remaining coriander leaves.
