Ingrédients
- 200g feta
- 3 tbsp olive oil
- ½ red onion
- 200g cherry tomatoes
- 100g green olives
- big pinch of chilli flakes
- 2 tbsp sherry vinegar
- 1 tbsp sesame seeds
- 1 x 250g pouch Merchant Gourmet Spanish-Style Grains
- 2 large handfuls of rocket
Méthode
- Heat your grill to high.
- Make the salsa by finely chopping the red onion, quartering the cherry tomatoes and roughly chopping the green olives. Scrape into a bowl with 2 tbsp olive oil, sherry vinegar and the chilli flakes. Season the salsa well with salt and black pepper.
- Lay the feta into the middle of a medium roasting tin, drizzle with 1 tbsp olive oil. Slide under the hot grill for 5 minutes.
- After 5 minutes take the feta out from the grill, spoon the salsa around the edges and sprinkle with sesame seeds. Return to the grill for a further couple of minutes until the sesame seeds are toasted and the feta is nicely golden: watch it so it doesn’t burn.
- Meanwhile, heat the Merchant Gourmet Spanish Style Grains according to packet instructions.
- Tip the grains and rocket into the tray and stir so that everything is well combined.
