Ingrédients
- 2-3 ripe peaches, sliced
- 2 pouches of Merchant Gourmet Spanish-Style Grains
- ½ red onion, sliced thinly, pole to pole, and rinsed for a few seconds in a sieve
- A handful of olives
- A handful of toasted pine nuts
- A handful of coriander
- A handful of mint
- A handful of parsley
- A handful of fresh oregano
- 50 ml lemon juice to taste
- ½ cup olive oil
- 2 cloves of garlic
- Salt to taste
For the herby dressing:
Méthode
- To make the dressing - simply blend together all of the herbs with the olive oil and garlic. Season with lemon juice and salt to taste.
- Grill the peaches on high heat until you get some grill marks, but not for so long that the peaches become soft. Set aside.
- To assemble the salad, mix together the grains, onions and olives, then top with the peaches. Drizzle over the dressing and sprinkle the toasted pine nuts. Serve and enjoy!
