A healthy and refreshing Japanese-inspired salad comprised of fresh vegetables and greens, all tossed in a soy, garlic and ginger dressing.

Ingrédients

  • Merchant Gourmet Red & White Quinoa
  • ¼ red cabbage
  • 75g edamame beans
  • 2 carrots, julienned
  • Handful coriander
  • 1 spring onion
  • 1 red chillies
  • 1 tbsp soy sauce
  • 1tsp sesame oil
  • Thumb of ginger
  • 1 garlic clove
  • ½ Lime
  • Salt to taste
  • Handful chopped cashews or peanuts to serve

Méthode

  1. Mix finely sliced red cabbage with salt and lime juice and set aside. 
  2. Finely slice the carrots, spring onion & chilli. Deseed the chilli if you’d like a little less heat. 
  3. In a large bowl, mix the Merchant Gourmet Red & White Quinoa, shelled edamame beans, coriander leave, carrots, spring onions and chilli together.
  4. Squeeze your red cabbage to drain any excess water & add to the salad. 
  5. Make a dressing of soy, sesame oil, ginger, crushed garlic and lime. 
  6. Drizzle over your salad and top with chopped nuts to garnish.
